What is Collagen?
It is the most abundant protein in the body and represents between 20% and 30% of the total proteins of an adult. They are secreted by connective tissue cells such as fibroblasts, as well as other cell types.
It is composed of a series of amino acids, such as proline and its derivative hydroxyproline, lysine and glycine, fundamental in the formation of the collagen helix.
The collagen helix is a secondary structure of proteins, composed of units called tropocollagen, which form a model of collagen triple helix. These helices achieve their stability through hydrogen bonding between the strands of the helices.
Through fibrogenesis, several helices associate forming fibers that achieve maturation and the mechanics of flexibility and traction of each connective tissue depend on it.

Because collagen is a very large molecule, it is subjected to an enzymatic hydrolysis process, where the collagen is “chunked” to make it more digestible.
